Ingredients

  • 4 salmon steaks
  • 800g potatos
  • 2 tablespoons butter
  • 1 cup of milk
  • 1 lemon
  • 100 grams baby spinach, this is a super long line for some reason to test responsiveness

Method

  1. Peel and halve potatoes. Place In a large pot with a teaspoon of salt and cover with water. Pre heat oven to 180ºC. Bring to the boil the potatoes and cook until a knife easily slides through the potato. Approximately 10-15 minutes.

  2. Drain the water from the pot and place warm pot back on stove to allow the potato’s to dry out. Add a splash of olive oil to a pan and fry salmon steaks for a minute each side.

  3. Transfer to oven and cook for 5-10 minutes depending on how pink you like the middle In a bowl combine butter, ½ teaspoon salt and milk and heat in microwave for 1 minute.

  4. Add milk mixture to potato’s and mash until soft and combined. In a bowl toss spinach with a pinch of salt and pepper, juice of half a lemon and a splash of olive oil.

  5. Remove salmon from oven and serve on the bed of mash with baby spinach and wedges of lemon.

  6. Preheat the pan over high heat to prevent the salmons sticking, then immediately reducing the heat once the salmon is added. This ensures the skin will remain crisp.
